Reneé Rapp Finally Has Her Own Sweetgreen Salad, and We Have the Recipe

Reneé Rapp is known for many things, including her role in "The Sex Lives of College Girls" and her stint on Broadway's "Mean Girls," as well as her music career. But acting credits and albums aside, Rapp is also known for being a superfan of the salad chain Sweetgreen. In 2022, a TikTok of her crying over her Sweetgreen order went viral, and since then she has continued to be vocal about her love for the chain's salads. "There is no sweetgreen in Paris who do I have to kiss to make this happen," Rapp once tweeted.

It comes as no surprise, then, that the actress and musician has decided to partner with Sweetgreen on a limited-edition salad. Appropriately named The Reneé Rapp Salad, the new menu item is inspired by Rapp's go-to Sweetgreen order. Like the one she went viral for in 2022, The Reneé Rapp Salad consists of cabbage, tofu, cucumber, tomato, broccoli, and cilantro, but instead of rice, it calls for spring mix salad leaves, in addition to spicy cashew dressing. "I switched from lime cilantro jalapeno vinaigrette with hot sauce to the spicy cashew, which was a big deal in my household," Rapp explains to People.

The Reneé Rapp Salad is currently available at all Sweetgreen locations from now until Oct. 23, but if you don't live anywhere near Rapp's favorite salad joint, it's worth re-creating at home.

To properly replicate it, you'll really have to nail the spicy cashew dressing, roasted tofu, and spicy broccoli. Luckily, Sweetgreen has publicly shared the recipes for both its dressing and its tofu on TikTok, while one employee divulged the recipe for the spicy broccoli on Reddit. The key ingredient in each one seems to be the "signature umami blend." (You can find a similar seasoning at Trader Joe's, and spice brand McCormick also sells a version of it.) When you put all these components together, you end up with a hearty salad with a bit of heat and a satisfying crunch. It's easy to see why Rapp orders it so often, because it's really that tasty.

The Reneé Rapp Sweetgreen Salad

INGREDIENTS

    • For the spicy broccoli:
    • 1 broccoli crown
    • 1 tablespoon sunflower oil
    • 1 teaspoon red pepper flakes
    • 1 teaspoon umami seasoning
    • For the roasted tofu:
    • 1 block (16 ounces) firm tofu
    • 1 teaspoon olive oil
    • 1 teaspoon sesame oil
    • 1 teaspoon hot sauce
    • 1/2 teaspoon red pepper flakes
    • 1/2 teaspoon umami seasoning
    • For the spicy cashew dressing:
    • 2 tablespoons kosher salt
    • 1 1/2 tablespoons garlic
    • 1 cup cilantro
    • 1 tablespoon sesame oil
    • 1/2 cup young ginger
    • 2 tablespoons rice wine vinegar
    • 2 tablespoons maple syrup
    • 1 tablespoon red pepper flakes
    • 1/3 cup + 2 tablespoons cashew butter
    • 1 tablespoon lime juice
    • Splash of water
    • Dash of umami seasoning
    • For the salad:
    • 5 ounces spring mix
    • 1/4 cup each of:
    • Red cabbage
    • Cucumbers
    • Cilantro
    • Red onions
    • Grape tomatoes
    • Spicy broccoli
    • Roasted tofu

    INSTRUCTIONS

    1. Preheat an oven to 400°F.

    2. Slice the tofu into cubes, then dress with olive oil, sesame oil, hot sauce, red pepper flakes, and umami seasoning. Transfer to a baking tray and set aside.

    3. Cut the broccoli into bite-size pieces, and coat with sunflower oil, umami seasoning, and red pepper flakes. Toss to combine, then transfer to an oven-safe baking dish.

    4. Bake the broccoli and tofu for 30 minutes.

    5. Meanwhile, prepare the dressing by blending together the salt, garlic, cilantro, sesame oil, ginger, rice wine vinegar, maple syrup, red pepper flakes, cashew butter, and lime juice along with water and umami seasoning.

    6. To assemble the salad, start by shredding the cabbage and deseeding and slicing the cucumbers. Then, chop up the red onions, cilantro, and tomatoes.

    7. Add the spring mix to a large bowl, and top with the veggies, spicy broccoli, and roasted tofu.

    8. Drizzle the dressing over the salad, toss to combine, and enjoy!
